Ingredients:
6 cups water
1 tsp salt
2 cloves garlic, minced
2 cm ginger, minced
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
2 bay leaves
1 cinnamon stick
1 star anise
2 tbsp oil
1 medium onion, finely chopped
1 medium tomato, finely chopped
4 cups beef broth
2 cups coconut milk
1 tbsp sugar
1 tsp salt
To serve:
- Cooked rice
- Fried shallots
- Chopped scallions
- Fried potatoes (optional)
- Hard-boiled eggs (optional)
- Fried tofu (optional)
- Sambal oelek (chili paste)
Instructions:
- In a large pot, combine the beef, water, salt, garlic, ginger, coriander, cumin, turmeric, bay leaves, cinnamon stick, and star anise. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 1 1/2 to 2 hours, or until the beef is tender.
- In a separate pan, heat the oil over medium heat. Add the onion and tomato and cook until the onion is translucent, about 5 minutes.
- Add the cooked onion and tomato to the pot with the beef. Add the beef broth, coconut milk, sugar, and salt, and bring to a boil. Reduce the heat to low and simmer for an additional 20 minutes.
